Why our genes are "not ready" for fast food and what this means for health
The human diet has changed over millions of years, but especially sharply over the last 10,000 years, and more precisely over the last 100–150 years. Our genetic apparatus was formed in an era when people lived in small groups, hunted and gathered wild plants. Today, however, most people eat ultra-processed food that simply did not exist a century ago.
This "gap" between what our genes are adapted to and what we eat now is called evolutionary (nutritional) mismatch. Many researchers link it to the rise of chronic diseases — obesity, type 2 diabetes, cardiovascular pathologies. Below is how our diet changed and what follows from it.

The agricultural revolution: what changed
About 10,000 years ago, in the Fertile Crescent, farming and the domestication of animals began. This radically changed nutrition: grains, legumes and milk appeared. The diet became less diverse but more stable — food surpluses appeared for the first time.
Stability and population growth
The ability to store food allowed civilizations, cities and human numbers to grow.
Less diversity
Narrowing the diet to a few cultivated plants increased the risk of deficiencies and new diseases (caries, anemia).
The industrial era and ultra-processed food
The industrial revolution of the 19th–20th centuries and especially the second half of the 20th century brought the most drastic change in diet in all of history: fine flour, refined sugar, vegetable oils, preservatives and thousands of additives. Ultra-processed food (UPF) appeared.

Nutritional mismatch and diseases of civilization
Our genes are mostly "tuned" to the whole diet of hunter-gatherers, but we live in a world of ultra-processed food. This mismatch explains a number of problems:
Excess and obesity
Evolutionarily, sugar was rare. Now it is everywhere, especially in drinks — hence the obesity epidemic.
Blood pressure
Our ancestors got little sodium. Modern excess salt is a factor in hypertension.
Deficiency
Hunter-gatherers ate 100+ g of fiber a day; modern people eat several times less. This affects the microbiome.

You do not need to literally copy the paleo diet. It is enough to return to the diet what our genes are adapted to, and limit what they "do not know".
Eat whole foods
More vegetables, fruits, meat, fish, eggs, nuts, legumes — minimal processing.
Limit ultra-processed food
Less soda, chips, sweets and fast food. If the ingredients list is long with additives — it is UPF.
Bring back fiber
Vegetables, greens, legumes, whole grains — aim for 25–35+ g of fiber per day.
Balance fats
Fatty fish (omega-3), olive oil, nuts. Limit excess omega-6 vegetable oils.
Watch sugar and salt
Evolutionarily they were rare — return them to moderate amounts.
